The day before our first frost I went out to the garden and marveled at the beauty of the roses. They were singing their last song. Notice the spaghetti squash growing on the ledge of the birdbath. I made sure the squash did not sit in the birdbath. But it was fun watching it grow and climb. I love to eat food in season and grown locally. Here is a recipe for a very easy tasty soup.
SQUASH APPLE SOUP
2 Tablespoons each Butter and Oil
2 Medium peeled and seeded Butternut Squash
2 Chopped Onions
2 or 3 peeled and chopped small Apples
1 Medium chopped Zucchini
4 Cups Broth (I use vegetarian)
½ to 1 tsp Season Salt to taste
¼ to ½ Cayenne or Paprika according to taste
Sauté onions in butter and oil. Add Butternut and Zucchini
Squash. Add Apples. Add Broth and water as needed. Add spices to taste. Cook until soft. I use a hand held submersible blender to puree as desired. - enjoy

ReplyDeleteThis soup looks delicious. The farmers markets here are full of butternut squash, I think that I will try some this weekend.
